St. Patrick’s Day “Lucky Charms Marshmallows” Popcorn Mix

When fun holidays, seasons, and celebrations make their way around, it’s always hard not to feel jealous, although I’m sure St. Patrick’s Day isn’t one you’d often hear associated with the word “jealousy” very often, but it is for me! You see, around this time every year, all of my social medias – but mostly my Instagram – is FILLED with images of Lucky Charms.

Recipes including it, photos of the box, DIY projects inspired by it, you name it. But little ol’ me, way over here in Australia, does not get to be blessed with such a cereal on my shelves. I actually couldn’t take it this year and went to a specialty candy store in hopes of finding a box of some… and I did. For $15.

I just couldn’t do it. I told myself I would go up to $10, because I honestly didn’t think it would be even that high, so my heart broke when I read $15. And thus, another year, another St. Patrick’s Day goes by, and I am still yet to taste Lucky Charms cereal. But that won’t stop me from celebrating in my own way! As you can see, I made the little marshmallows out of icing so I can snack happily and delicious and colourfully 🌈

YOU WILL NEED:

Ingredients:

β™‘ Egg whites (if you’re concerned about using raw eggs, look for pasteurised egg whites at your supermarket!)
β™‘ Flavour extract of your choice
β™‘ Icing mixture (exact measurements in recipe)
β™‘ Popcorn maker
β™‘ Popcorn kernels
β™‘ Chefmaster Liqua-Gel food colour in Super Red, Neon Brite Yellow, Neon Brite Blue, Neon Brite Green, Leaf Green, Neon Brite Purple, and Neon Brite Pink (gifted)

DIY Lucky Charms Marshmallow Nail Decals

DIRECTIONS:

1. First, choose which of the Lucky Charms marshmallow designs you wish to create – but keep in mind that the food colours that I have listed in the ingredients are to make the pink heart, red balloon, rainbow, blue moon and four leaf clover designs! (Fun fact: the Wikipedia page includes the meanings behind the marshmallows, which I think is super cute! ✨)

Once you’ve decided which marshmallows you’re going to create, sketch out multiples of each design onto your tracing paper, keeping each one at least 1-2 centimetres apart from each other. These will be your guides for when you’re piping later on. Tape down your tracing paper onto your sheet of cardboard, but don’t get any tape onto any of the drawings you just did. Place a sheet of baking paper over the top of that cardboard.

2. Place a small ramekin of water and a pipette nearby. Pour one large egg white into a small metal bowl and add 1/2 a cup of icing mixture. Fold together with a spatula until completely mixed, then add another 1/2 cup of icing mixture and repeat. Add 1/2 teaspoon of your chosen flavour extract, another 1/2 cup of icing mixture, and fold once again. This mixture needs to be thick enough to pipe out and hold its shape, but if it’s too thick to even stir, then use your pipette to add one or two drops of water and mix again.

3. Take a small scoop of icing and move it to a ramekin. Add a drop of Neon Brite Yellow food colour, mix in completely, then transfer to a piping bag. Depending on what kind of bag you’re using, either using a very small round tip, or just cut off the tip of the bag, and pipe out the middle arch of the rainbows that you sketched out earlier. Wash and dry the utensils you just used.

4. Move another small scoop of icing to a ramekin and add a drop of Leaf Green food colour, then mix it in completely. Either using a piping bag with a small, round tip – or just cut the end of a disposable or compostable piping bag (I used these ones, which were gifted to me) – and pipe out the middle parts to all of the clovers. Wash and dry the utensils you just used.

5. If the icing has started to harden, add a drop or two of water with the pipette and mix once again with a spatula. Add a few scoops of icing into a clean ramekin, then add a drop of Super Red food colour and stir in completely. Scoop into a piping bag and repeat as usual, this time piping out all the balloons. Wash and dry all the utensils used.

6. Add a few scoops of icing into a ramekin, add a drop of Neon Brite Blue food colour and stir in completely. Place in a piping bag, follow the same steps, and pipe out the blue moon shapes AND the top arch of the rainbows. Wash and dry all the utensils used.

7. Almost there (for now)! Place a few scoops of icing into a ramekin, add a drop of Neon Brite Pink food colour and stir in completely. Put in a piping bag, and pipe out the pink hearts AND the bottom arch of the rainbows. Wash and dry all the utensils used.

8. Add a drop of Neon Brite Green into the rest of the icing, mix it into, scoop as much as you think you’ll need into a piping bag, and pipe out the outer shape of the clover. Leave all the icing shapes out to dry for a couple of hours. I recommend creating these in the morning and eating the popcorn as a nighttime movie snack just to be sure they’re ready!

9. Your icing creations will be delicate, but if you made them correctly, they shouldn’t shatter when you pick them up. In fact, I picked mine up just with my fingers! But I have made these a few times before, so if you wish to be more careful, you can use a toothpick or a small angled spatula to get underneath and carefully lift each one off the baking paper. Once it’s been lifted off, it’s a lot easier to move – but if it’s not dry, it will smudge, and if it’s TOO dry, it will crumble. Just go slow and steady, and you should be okay!

10. Now it’s the time to make your popcorn, and how you do that will depend on what kind of machine you have. I have a very small machine that comes with a cup that is a “serve”; I put two serves in and it still only made as much popcorn as you’re seeing in these photos, as I was only looking to make a snack. Allow your popcorn to cool before moving onto the next step.

11. Add one egg white and 1/2 a cup of icing mixture into a metal bowl. Fold together using a spatula. Once it is mixed together, add 1/2 teaspoon of your chosen flavour extra, and another 1/2 cup of icing mixture, and fold together once again. Mix in one drop of Leaf Green food colour to the icing, then move to a piping bag.

12. The final step: putting it all together! Place a thin layer of popcorn in your boxes, then pipe some icing on top, and pop some of your Lucky Charms creations in there too. I recommend adding a good amount of icing to the popcorn, as plain popcorn as suuuuuper boring in my books!

Add some more popcorn, more icing, and Lucky Charms creations, and continue until each one of your popcorn boxes if full – but keep most of the Lucky Charms creations for the top so you can experience their beauty all on their own without any obstructions first 😍

  1. As a Brit livihng in the USA let me tell you that I feel the $15 cereal! I love UK baked beans, but at $3+ a can I’ll pass! especially then they’re like 50p in the UK! Ridiculous!

  2. I actually don’t have much knowledge about St. Patrick’s Day but yes I love this idea of colourful popcorns and they look super tasty.

    • I believe its origins are of a Christian belief (the date of the death of Saint Patrick), but much like Valentine’s Day or Halloween – which began the same way – it has evolved into a holiday that is celebrated by people all over the globe, regardless of their beliefs. I DO know there is always lots of green, four leaf clovers, and rainbows on March 17th!
